For completeness and perhaps to help others, here's the route I took on Wednesday -
This isn't the best way, but this was my first shot; so basically:
Started at 21st/Market,
20th W to Pecos.
Pecos N to ~ 64th.
You'll see an entrance to a bike path, "Little Dry Creek" I think it's called.
Take that W until about 80th/Wadsworth.
From there, you can continue to take Wadsworth N to 100th (Church Ranch), or play with the multitude of bike paths that are around there. Standley Lake was what attracted me to this route, but I found the bike paths actually to be bike trails that wouldn't work with my setup - west of the lake is all open space. I got a bit lost in this area playing around. Many of the neighborhoods have small bike paths, but each neighborhood doesn't connect to the one next to it - probably to cut down on car traffic. Annoying. There's a new bikeshop on 88th and Wadsworth that came in handy when I needed Yet Another inner tube... something with, "Super" in its name. Not your LBS - collosal. A little too... Collosal.
Anyways,
Took, 100th W to Simms,
Simms N to 120th (State HW 128)
120th W to McCaslin
McCaslin N to South Boulder Road
South Boulder Road W to awaiting Eggplant Parm Dinner on Broadway/Table Mesa.
You're riding mostly on the side of some busy streets, except for the long Dry Creek bike path and you do have to cross I-36 on McCaslin - there's current some construction in that area, but McCaslin had extremely well painted bike lanes. Very Hilly. Every down has an up. South Boulder Road is all downhill. Most of the roads after 100th aren't very congested - I was on them right when rush hour was happening without much agro at all - even State HW 128 - it's a small, one line type of deal. Pumped up my tire on the corner of one of the large tech-campuses and was asked if I was OK. Pleasant surprise. Happened twice.
So that's the route.
If you're comfortable on the road, it ain't too bad. I purchased the TBTC'sGreater Denver Area Map for like 5 bucks at the LBS - there's a whole mess of them at:

They're all somewhat hard to work with on this powerbook 12" - lots of zooming in and out - and well, it's a sort of a dumb idea to bring a Mac on a tour like this :)
