This can be done on a cyclocross bike or a mountain bike, but IMO a gravel bike would be most suitable. I tagged it for cyclocross, because RWGPS has no category for gravel bikes.
IMO, a gravel bike with its more compliant frame and bigger tires will be more comfortable than a cyclocross bike. A mountain bike would be even more comfortable on the class IV "roads", but at the end of the day after 63 miles the extra weight would sap your energy and the greater tire rolling resistance would slow you down.
Though this is 60%-paved/40%-unpaved, it felt like less asphalt than that. The unpaved surface included everything: rutted and rocky class-IV "roads", sand, gravel roads, and hard-packed dirt/grass. There was also narrow asphalt with no cars.
I don't know how Red Apple Farm feels about someone parking there for a bicycle ride, but there is plenty of parking — especially in the remote lot across the street, and especially when it's off-season — so I imagine if you shop, eat lunch or have a drink there afterward, they would appreciate it. It's a nice place!

Best format for turn-by-turn directions on modern Garmin Edge Devices
Best format for turn by turn directions on Edge 500, 510. Will provide true turn by turn navigation on Edge 800, 810, 1000, Touring including custom cue entries. Great for training when we release those features. Not currently optimal for Virtual Partner.
Useful for uploading your activity to another service, keeping records on your own computer etc.
Useful for any GPS unit. Contains no cuesheet entries, only track information (breadcrumb trail). Will provide turn by turn directions (true navigation) on the Edge 705/800/810/1000/Touring, but will not have any custom cues. Works great for Mio Cyclo. Find GPS specific help in our help system.
