On this day in 1903, Ruth Jones Graves was born in Walpole, Massachusetts. After graduation from the Framingham State School of Household Arts in 1924, she taught home economics at Brockton High School and worked as a hospital dietitian. In 1928, she married Kenneth Donald Wakefield, and in 1930 they bought a historic building in Whitman, Massachusetts that was reputed to be a toll house as early as 1709. They turned the building into a lodge, the Toll House Inn.
Ruth cooked for guests using her own recipies and her grandmother's. She authored cookbooks, the most popular being the 1931 Ruth Wakefield's Tried and True Recipes. In 1938, Ruth and her assistant Sue Brides experimented with a butterscotch pecan cookie popular with her guests. She thought to add melting baking chocolate to the batter, but she was fresh out, so she used an icepick to break some Nestlé semi-sweet chocolate bars into chips that didn't melt as they baked.
The cookies became very popular and were featured in newspapers. Ruth received many letters requesting the recipe for the cookie. She gave the Nestlé company permission to print the recipe for $1, a lifetime supply of chocolate, and a consulting deal with the company. In tribute to their origin, Nestlé named the product Toll House Cookies.
Ruth retired in 1966 and sold the Toll House, which later burned down in 1984. Ruth lived to the age of 73.
For today's ride, I did familiar climbs to Mount Saint Mary's and Casiano Road, but I turned around before the steepest part at the top of Casiano. It all felt quite good, and I was glad to get out late in the afternoon after a long day of work. For the first time, I came back on Olympic Boulevard, which is quite good, even without any bike infrastructure at all, until it gets bad below 11th. So next time, 11th to Pico or Ocean Park.
